Filled with almond flour and nut butter (for protein and heart healthy fats), these delicious energy bars will power you through your morning. And they could not be simpler to make!

This is the third of my top picks for plant-based breakfasts that provide protein and staying power. See my first pick, Curried Scramble Tofu with Apricot Toast and my second Quinoa Swirled With Almond Milk.

Super Quick and Nourishing Energy Bites 

Ingredients

Makes about 16 energy bites. One serving is 2 energy bites.

1 cup quick cooking oats

1/2 cup almond flour (also called almond meal; check your natural foods section of your grocery store)

1/3 cup dried tart cherries (or dried unsweetened cranberries)

1/2 cup all natural peanut butter (or your favorite nut butter)

1 tbsp good quality cocoa powder

3 tbsp honey

1 tsp vanilla

Directions

Mix all ingredients in a bowl until blended. Scoop into 1” balls and refrigerate until ready to eat!
